Pizza Dough Recipe
Here is a genuine Italian pizza dough recipe, which you can use as a pizza base for several types of toppings.
Ingredients for 3 persons (3 pizzas with a 12 inch/30 cm diameter):
0,9 ounces / 25 grams of beer yeast
1 tsp of sugar
5 tbsp of water
2.5 ounces / 70 grams of flour (Manitoba or type 0) - to add to the yeast
For the dough:
21 ounces / 600 grams flour
0.7 ounces / 20 grams salt
1.25 cups / 3 dl water
3 tsbp extra virgin olive oil
Put in a large mug
0,9 ounces / 25 grams of beer yeast with
1 teaspoon of sugar and
5 tablespoons of water at room temperature.
Mix it well with a teaspoon until the yeast is completely dissolved, then leave it rest covered with cling film, for about 40 minutes, until there is some foam on the surface.

Then add to the yeast dissolved in water 2.5 ounces / 70 grams of Manitoba flour or type 0 flour
and knit it until you get a small bun, which will have to rest in the mug, covered with cling film, for about an hour, until its volume almost doubles.



Put in a big bowl:
21 ounces / 600 grams of flour,
0.7 ounces / 20 grams fine salt and
1.25 cups / 3 dl of water at room temperature.
Mix the ingredients with a spoon. Then add
3 tablespoons of extra-virgin olive oil and
the bun containing the yeast
and continue knitting it, until you get a smooth and elastic dough.
Shape it as a ball, grease it with a little olive oil and put it into a bigger bowl, which must well greased, too. Cover it with cling film and leave it to raise for 2-3 hours, in a warm place, without any air draught (a tip: the best place is the oven, turned off, of course!)
After that, divide the dough into 3 buns, which you will cover with a little flour and leave to rest on the table, covered with a clean table cloth.
Now the dough can be rolled out with a rolling pin or with directly with your hands, on a round baking tray with a diameter of about 12 inch (30 centimetres).
Baking will take about 15-20 minutes, depending on the topping you will add.
